Chicken Souvlaki, Gyro Style with Tzatziki Sauce

We ate so many great versions of Gyro’s in Turkey. Peter loved this one particular kiosk in the village by where we were staying that, we almost missed our plane, Peter had to have just one more Gyro!

I usually try to make something out of the left-overs.  I make Gyros quite often, because they are a great way to use up what you have…I hate to waste food! I used the left-over chicken, chorizo, and cipollini onions from yesterdays posting…The Skewers.

Chicken Souvlaki, Gyro Style with Tzatziki Sauce

Use the left-over chicken, chorizo and cipollini onions that were from the skewers the night before.


Pita Bread

Tzatziki sauce (see below)

1 tomato

1 thinly sliced yellow onion

2 tablespoons of fresh mint

1 tablespoon dried oregano

1 lemon

Tzatziki sauce

1 English cucumber, grated

16 oz of Greek style plain yogurt

2 small garlic cloves, pressed

1 teaspoon red wine vinegar

Juice of ½ a lemon

2 teaspoons of dried oregano

Coarsely grate the cucumber into a bowl. Add a few pinches of salt and squeeze the juice out with your hands. Take the cucumber and add the yogurt into a bowl. Press the garlic and add the vinegar, lemon and, oregano. Add a pinch of salt and cracked pepper to taste. Stir all the ingredients together and give it a taste to make sure you have the balance right then set aside.


  1. Make Tzatziki sauce.
  2. Cut tomato in a large dice. Set aside.
  3. Thinly slice onions. Set aside.
  4. Re-heat your chicken, chorizo and cipollini onions. Set aside.
  5. Finely slice your mint. Set aside.
  6. Lightly brown both sides of pita bread on a gas burner. Keep warm in a towel.
  7. To assemble: Take pita bread and put a large dollop of Tzatziki sauce on it, then add the meat mixture, tomato, onion, a little oregano and a squeeze of lemon. ~Yum!

You could really do this with any type of meat left-overs!
