Cedar-Planked Roasted Salmon

Peter saw this Salmon recipe in one of my cookbooks, At Home with Michael Chiarello. I took the general ideal of it, and made it my own. I feel if you have a beautiful, fresh piece of Salmon, like a Coho Wild Alaskan Salmon, you don’t need to put a sauce on it. So, I just put a little salt, pepper and oregano. We usually grill our cedar-planked fish but, the weather didn’t permit it. So, I did it in the oven which, worked great and the cedar plank gave the kitchen a nice aroma.

Cedar-Planked Roasted Salmon

Yield 4 servings


1 pound of Coho Wild Alaskan Salmon (Whole Foods)

About 2 tablespoons of Kosher Salt and freshly cracked pepper

3 Bay leaves

3 thinly sliced lemons into half moons

About 2 tablespoons of oregano

Zest of one lemon

1 Cedar-Plank about 12 by 7 inches, submerged in water for no less than in hour to over night.


1. Heat your oven to 400 degrees.

2. Sprinkle salt, pepper and oregano on flesh side of salmon.

3.  Slice salmon to insert bay leave and lemon half moons.

4. Make sure your oven is preheated to 400 degrees. Place Salmon on Cedar Plank and insert into oven right onto the rack. Make sure your oven rack is in the middle of the oven.

5. Roast for about 20 minutes or until cooked to desired doneness.

6. Serve immediately…and the nice thing is the cedar- plank is your platter!
