Tuscan Oven Roasted Broccoli with Parmesan Cheese
3 heads of broccoli
3 tablespoons of olive oil
1 cup of vegetable (or chicken) broth
1 cup of Parmesan cheese, coarsely grated
Kosher salt and fresh cracked pepper to taste
Clean and divide broccoli. Toss with olive oil. Make sure you have a spot in your Tuscan Oven to roast the broccoli. Place the broccoli and broth in Tuscan Oven proof dish. Cover with heavy duty foil. Put broccoli in the oven in a spot that reads 400-450 degrees. Tossing every 10 minutes until broccoli is tender. Sprinkle the Parmesan cheese on top and roast until the cheese is melted.
