Bruschetta with Goat Cheese, Prosciutto, and Fig Jam

I love to use things that I have already in my fridge! I made this appetizer one night when I had my sister and brother-in-law over for dinner. My brother-in-law loved it and said I should defiantly put it on my blog…so here it is!

Bruschetta with Goat Cheese, Prosciutto, and Fig Jam

Serves 4


4 oz goat cheese

4 thinly sliced Prosciutto

Fig Jam

1 French baguette

Olive oil

Kosher salt

Freshly ground pepper


Slice the baguette on a diagonal about 1/2 inch thick slices. Coat one side of each slice with olive oil using a pastry brush. Place on a cooking sheet, olive oil side down. You will want to toast them in the top rack in your oven, so you may need to do these in batches depending on the size of your oven. Once the oven has reached 450°F, place a tray of bread slices in the oven on the top rack. Toast for 5-6 minutes, until the bread just begins to turn golden brown.

Take out of oven and spread the goat cheese, ½ a slice of prosciutto, and top with a teaspoon of fig jam. Return to oven and take out when the cheese and fig jam starts to bubble. Serve immediately.
