On Friday’s we usually have a playdate with Pierce’s buddies, Aiden and Matteo! Last Friday we made pizza’s with Aiden and his Mama, Deann…Matteo and his Mama had another engagement. Pierce and Aiden made cheese pizza’s and I made one with the balsamic marinated tomatoes (basically the recipe you would use for bruschetta), burrata cheese, and some fresh basil from Pierce’s garden. The boys were having so much fun…that Aiden didn’t want to go home! ~So adorable!
Pizza Dough Recipe
Yield: 5-7 Pizza’s Time: About 2 Hours
1 packet of Fleishman’s Yeast (they come in a three pack)
2 teaspoons of sugar
1 ½ cups of luke warm water
4 ½ cup of all-purpose flour
1 ¼ teaspoons of salt
4 ½ tablespoons of olive oil
Put one packet of Fleishman’s Yeast in bowl then add sugar and luke warm water and gently mix. Set aside.
Wait until the bubbles appear and add the flour, salt and olive oil. Mix until dough comes together. It should be slightly sticky.
Form into a ball (you don’t want to over work at this point it should have some air in it)
Put dough in oiled bowl with a moist towel on top and let rise in a draft free spot for about an hour or until dough has risen.
After an hour lightly punch dough down and place on floured surface. Form into individual pizza balls. Put balls into a dish and cover with a towel to rise again but, this time putting in the refrigerator until ready to use.
Balsamic Tomato Medley
1 basket of yellow grape tomatoes
1 basket of red grape tomatoes
About 10 basil leaves, stems removed and chiffonade
2 cloves of garlic, chopped
2 tablespoons Balsamic Vinegar
A pinch of sugar
A pinch of kosher salt
Freshly cracked pepper
¼ cup of olive oil
In a large bowl, combine the medley of tomatoes, garlic, olive oil, vinegar, basil, salt, and pepper. Allow the mixture to sit for 10 minutes.
To assemble pizza:
1 ball of burrata cheese
Balsamic marinated tomatoes
Kosher or sea salt
Preheat oven to 550 degrees.
Roll out pizza dough to whatever size you like. Place dough on metal pan or sheet pan. Drizzle a little olive oil on prepared pizza dough and then add the drained (just take the spoon to the side of bowl and drain off extra marinate) tomato medley, burrata cheese (loosely torn) and, a sprinkle of sea salt around the other edge of pizza. Bake for about 5-6 minutes…stay close and check pizza to make sure it doesn’t get to crisp! After you take out of oven…sprinkle with grated cheese and fresh basil leaves!
