I saw this recipe for Bacon and Romaine Skewers in my new Food & Wine Cookbook that I received in the mail today! I switched it up a bit to accommodate the items I already had on hand. We had this beautiful romaine lettuce that we’ve grown in Pierce’s garden.
It called for blue cheese and I had gorgonzola but, I think that Peter and I agreed that we preferred the gorgonzola over the blue. It was so fun to eat and so tasty… I will be serving this at my next dinner party!
Bacon and Romaine Skewers with Gorgonzola Cheese Dressing
Makes 24 Skewers
4 ounces Gorgonzola Cheese
¾ cup of mayonnaise
½ sour cream
1 tablespoon fresh lemon juice
1 teaspoon Worcestershire sauce
½ teaspoon garlic powder
Salt and freshly ground pepper
4 ounces of slab bacon, cut into large dice
½ pound romaine hearts, small leaves whole, large leaves cut into pieces
- In a food processor, pulse the gorgonzola, mayonnaise, sour cream, lemon juice, Worcestershire sauce and garlic powder until smooth. Season with salt and pepper.
- In a large skillet, cook the bacon over moderate heat until crisp, about 5 minutes. Drain the bacon on paper towels.
- Thread a few romaine leaves and bacon cubes onto each of the bamboo skewers. Arrange the skewers on a platter and serve with gorgonzola cheese dressing on the side.
