When I was making these Potato Cakes (Slim), Pierce came in the kitchen and asked me what I was making? I told him and he said, “Tayto cakes does Tayto eat these?” Pierce has a friend called Matteo that he calls, Tayto… it’s so cute!
Keeping with my Irish food this week…here is a potato cake that in Northern Ireland they call Slim. My mother-in-law always had these at her breakfast table when we lived with her. The ones that you can buy from the store over there have a lot more flour in them and remind me of an American pancake (except for the frying in bacon fat!) The recipe I used was out of a traditional Irish cookbook so… of course I fried them in bacon fat ~Pierce loved them (must have been the bacon fat ~ha ha!)
